We were having guest over this past Sunday and I wanted to find something easy for us to prepare.  I decide we would do Mexican theme, having fajitas and the fixing to go along with it.  To start, B made some Pico de Gallo.  This can be a great with chips too. Here is his recipe.

Homemade Pico de Gallo. Quick and easy recipe for Taco Tuesday or to add Mexican flavor to any dish.

 

Ingredients

1 Red onion

3 Tomatoes

Cilantro

Jalapeños (optional)

1 Lime

Preparation Instructions

Dice the onion and tomatoes. Also dice the jalapeños, if you want to give the Pico a little kick. Once everything is diced up, mix it all together in a bowl. After it is all mixed well, cut the lime in half and squeeze the juice onto the mixture. 
Refrigerate for about an hour, then serve. Any leftovers can be refrigerated.
