Let’s face it: being a single working mom is unarguably one of the most difficult and demanding positions to be in. Seriously, every single one of those women deserves a medal. For all of you ordinary couples who are out there reading this: just try juggling between a regular daily job and all the responsibilities that go along with having a child. Sure, you may have done it before, but imagine doing that all by yourselves for an extended period of time. Not the most amusing or pleasurable thing to do, right?

Now, with all that workload and constant care for the child (if you put children in the equation, suddenly it all becomes much more concerning than initially), parents tend to completely neglect themselves. One of the first things that suffer is the mother’s diet. Often times they eat irregularly – whenever they can or whatever they manage to gobble down their throats while simultaneously changing the diapers, helping with homework or doing the chores.

One-Pan Meals

There’s nothing more time-consuming and nerve-wracking than having to use tons of dishes to prepare something simple. That’s why the best choice for you could be the so-called one-pan meal. The name itself is self-explanatory: you use just one cooking pan for making a meal.

You can start off by putting some onions and garlic, on top of the previously heated and oiled pan. Add sliced chicken meat or salmon and when it’s almost ready, put some freshly chopped vegetables like spinach and paprika, add salt and pepper and cook for a few more minutes. Voila! This shouldn’t take more than 20 minutes overall.

Healthy Tuna and Beans Sandwiches

You know those cans of tuna and beans that are sitting in your cupboard since forever? Just combine them together with some whole-grain bread. Spread some pesto on top of the bread slices, add tuna, beans, and lettuce and you’ll have a good nutritious meal in less than 5 minutes!

Tasty Chicken and Mushroom Risotto

After a long, exhausting day at work, there’s nothing that’s gonna boost your energy like a rice-based dish. Rice is full of complex carbs that keep you fed for hours, chicken gives you lean protein and mushrooms all the necessary fibers. It’s a perfect, easy dinner to cook – and quick too – especially if you have a rice cooker. But even if you don’t, it’s completely fine: by the time the rice gets ready you can do other things like buying groceries, diapers, baby clothes or strollers online – just use the time that you’d normally spend outside shopping to prepare a wholesome meal.

To make this meal just pan-fry chicken and mushrooms with onions, salt, and pepper. After that, add rice and stir until all the water evaporates and there you have it: your finger-licking, lip-smacking, melt-in-your-mouth meal is ready!

Fajita Burrito Bowls

You know how hard can it be sometimes to make a quick meal that tastes delicious at the same time? Fajita burrito bowls are definitely the epitome of such a dish.

Here are the following ingredients to prepare this:

  • Any type of rice: cilantro lime rice (or cauliflower rice), but you can also use brown rice or even quinoa;
  • Any type of beans will also be fine – you should aim for black beans, but red beans, chickpeas, or refried beans will also do good;
  • Corn (it doesn’t make any difference really if it’s frozen, canned or fresh);
  • Some sliced avocado and red (or yellow) pepper strips;
  • Chicken (breasts preferably).

After you’ve made sure that you have all the necessary ingredients, you start off by dividing everything into 4-6 containers. After that, you cook chicken, peppers, and rice and put them into containers. The next step is to prepare your dressing and add avocado when the meal is ready to serve!

Smoothies

Smoothies are a great way to either start off or finish the day, and even for dessert. If you want to treat your body with a plethora of vitamins, minerals, good healthy fats and carbs, lean proteins – and all of that in a single cup – you definitely want to opt for smoothies. On top of that, smoothies are yummy if you mix the right ingredients. With so many options to choose from out there, you can’t really miss. There are also plenty of savory recipes for smoothies if you want to dial down a little bit and limit your sugar intake.
