We were having guest over this past Sunday and I wanted to find something easy for us to prepare. I decide we would do Mexican theme, having fajitas and the fixing to go along with it. To start, B made some Pico de Gallo. This can be a great with chips too. Here is his recipe.
Ingredients
1 Red onion
3 Tomatoes
Cilantro
Jalapeños (optional)
1 Lime
Preparation Instructions
Dice the onion and tomatoes. Also dice the jalapeños, if you want to give the Pico a little kick. Once everything is diced up, mix it all together in a bowl. After it is all mixed well, cut the lime in half and squeeze the juice onto the mixture. Refrigerate for about an hour, then serve. Any leftovers can be refrigerated.
Other dishes for gathering, include beef and chicken fajitas, roasted mushrooms and peppers, and guacamole. If you are looking for some Labor Day ideas, that are easy, cheap, and yummy these will also work. You can also do shrimp fajitas.

I make mine without the cilantro as I think cilantro tastes like soap.
