Since moving from Japan, whenever I find a noodle restaurant, you can bet that I will eat there. It is hard to find good ramen in my city. The best, I’ve found is in of all places, Wichita, KS. When I saw online that the
Red Rock Casino, Resort, and Spa where I stayed on my most recent momcation had a restaurant called 8 Noodle House, I knew it was one of the restaurants I was definitely eating it.
8 Noodle Bar at Red Rock Casino the menu had a little of everything… Chinese, Japanese, Vietnamese, and Thai cuisines. I knew that it wasn’t all about the ramen, but I had high hope.
I went at dinner time, it was busy for Friday evening dinner, however, the wait was not long. I was seated within minutes. The food looked delicious on the tables around me. I was ready to taste the bowl of ramen when it was sat down in front of me. I ordered the Miso Raman, as it one of my favorites. It is miso infused pork broth, pork belly, poached egg, seaweed, tofu, and scallions.
It smells great and looks great. I’m chopstick in the bowl to taste it, the broth is good. But the noodles… what a disappointment. It was not ramen noodles, it looked like spaghetti noodles. I’m glad that it tasted good because it would have been a total fail if the flavor would have been wrong too.
This restaurant will not make my list of good ramen. My search for good ramen restaurants continues on.

I was just about to comment that the noodles looked so different than what I associate with ramen. I’m bummed that this restaurant won’t make your list, but it’s good to hear the flavor was good!
I’ve never been to a noodle bar, but this looks really yummy! I used to really love ramen when I could eat gluten, but I hate it didn’t live up to your expectations! Looking forward to a future post where you’ve found everything in one noodle-y place 🙂
